I dont know how good the encryption is, but there's nothing stopping someone from running a Tor node....and running some sort of packet sniffer and sniffing your data you send.
Hell, even Will Erwin has (or had..) a tor node...set up.
Then again, your ISP can/could do the same thing, since you are connected through their network. But ofc, they have a Privacy Policy.
